First Sip

A grape-like sweetness leads the cup, followed by a gentle touch of acidity.

As It Cools

As the temperature drops, the cup becomes increasingly fruit-forward and aromatic, while its floral character remains delicate.

The Finish

Sweetness gives way to a brief acidity before disappearing into a remarkably clean, short finish.

WHY WE CHOSE IT

We first met this Sidra on our very first visit to The Room. We ordered a cup, enjoyed its sweetness and fruit-forward character, and before leaving, naturally asked if we could bring a bag home. Apparently, we couldn't — the remaining coffee had already been reserved.

A week later, we returned to The Room for their public cupping with Everhaos. After more cups, more conversations, and probably spending a little too much time at the bar, the same barista jokingly suggested that we should buy even more coffee. We had only one answer: we still wanted the Sidra he wouldn't let us have the week before.

He went quiet for a moment, reached for the Sidra — and this time, handed it to us.

Some coffees make their way into Bindu through careful searching. This one took a second visit and a little persistence.
